• Once you can touch the fruit without burning your skin, gently squeeze out the pips and juice from the skins into the bowl to collect all the pulp and juice together, discard the squeezed out pips and skins. Keep the pulpy juice. • Place a sieve over a bowl, (with the muslin cloth lining the sieve) and pour over the pulpy liquid to strain, stir through the muslin and sieve using a slotted spoon until everything has sieved through. Decant into a sterilised bottle and refrigerate until needed. • To serve: Add two tots into a glass and serve with iced water, ice and fresh lemon slices. Stir. Delicious!
