Warning: Do not give Purslane to pregnant women or to anyone suffering from digestive ailments. Use only under a doctor's guidance. French Purslane vinegar pickle • Two cups dark sugar • ½ cup honey • 4 cups brown vinegar • 1 tablespoon cumin seeds • 1 tablespoon coriander seeds Fill sterilized jars with Purslane sprigs, young cucumbers, and onions enough to fill the jars. Simmer the sugar, honey and vinegar until the fragrance fills the kitchen (about 15 minutes) and add the seeds, meanwhile pack the sterilized jars with Purslane springs, young cucumber strips and small onions. Pour the hot vinegar mixture over the vegetables to almost overflowing and seal immediately, leave the pickle for three to four days and then serve with cheese, homemade bread and cold meats. This is a fabulous gift for the food connoisseur!
